Old Holiday Favorite Recipes With A New Twist!

Do you have recipe for a family treat that is done a different or easier way? I modified a plum pudding recipe that is easy easy!!! Here are all the instructions so
give it a try and let me know what you think.

This recipe tastes just like fruit cake without a lot of the extra fat (and expense!) etc. Will not keep like fruitcake, so freeze it if you want for Christmas.

Plum Pudding

1/3 cup margarine
1/2 cup molasses
1/2 cup milk
1 cup raisins
1 cup mixed peel

(cut margerine or butter into molasses, add milk, mix well - add fruit mix up well)


11/4 c flour
1 tsp salt
1 tsp soda
1/2 tsp nutmeg
1/4 tsp cloves

mix together well and put into a greased pan. (You may use a small, flat bottom stainless steel mixing bowl - my pan is 7" across by 3" deep). Place a piece of doubled over tin foil on top and secure with an elastic band.
Put bowl in a saucepan that is filled to about 1/3 of boiling water. Cover saucepan. Cook over medium heat for 21/2 hours. Use a cake tester to see if done. You may keep saucepan covered but check water level occasionally. (If not quite cooked enough, steam another 1/2 hour.

Serve plain as fruitcake or make a brown sugar sauce and serve warm. Guaranteed to be a new family favorite.
