Lemon Rice Pudding

Lastly add egg yolks. Cool to lukewarm. Beat egg whites until stiff peaks form. Fold into cooled pudding. Pour into 1 1/2 quart soufflé dish or straight sided casserole dish. Bake at 350 degrees for 50 minutes.

Orange Rice Pudding

Rice Pudding Recipes (w/ variations)

Thoroughly wash rice and add all ingredients into a greased baking dish. Bake in a 325 deg. F. oven for 2 hours; stirring several times while baking. Do not allow the mixture to boil. Serve either hot or cold.
This rice pudding recipe makes 6 servings.

This is the Tweaked Version:

3/4 cups of Rice
4 1/3 cups Milk
1/2 to 3/4 cups of sugar-(to taste/ personal preference)
1/2 tsp. salt
1 tsp. cinnamon
a dash of nutmeg
1/4 cup of raisins-(Optional)
3 drops of Vanilla Extract

Wash Rice and add to milk in a saucepan. Scold and add to a bowl with the rest of the ingredients Mix well. Place in a well greased pan and bake 1 hr, stirring every half hour. Cool and Serve.

Beat the eggs until frothy.
Add sugar mixture and rice
Flavor with lemon rind, cinnamon and nutmeg
Pour into a buttered casserole and bake for 45 min.

Serve warm or cold with a sprinkle of cinnamon or nutmeg....and whipped cream.....

Will make about 8 servings.

RICE PUDDING

2 eggs, separated
1/2 cup sugar
1/2 teaspoon salt
2 1/4 cups milk
1 teaspoon vanilla extract
2 cups rice, cooked (measure after cooking)
nutmeg

Beat egg yolks. Add sugar, salt, milk, vanilla, rice.

Beat whites stiff. Fold into mixture.

Top with nutmeg until top is covered.

Bake at 350 for 45 minutes


This is more like a custard than a rice pudding, especially depending on how much rice you use.

SPEEDY RICE PUDDING

4c. milk
1 egg beaten
1 pkg. cook and serve vanilla pudding mix
1c. uncooked rice
1/4 c. raisins (optional)

In a saucepan, combine milk, egg and pudding mix. Add rice and raisins. Bring to a boil over medium heat stirring constantly. Remove from heat; Pour into serving bowl. Cover with plastic wrap and refrigerate till chilled. Sprinkle with cinnamon sugar and nutmeg.

This pudding is almost as good as the baked version

Rice Pudding with Orange Sauce

as posted by cat lover in WFD 10/05:

Vegetable oil spray
2 cups skim milk, heated
2 cups cooked rice
1/3 cup sugar
1 1/2 tsp vanilla
1/4 sp nutmeg
1/2 tsp cinnamon
Egg substitute equivalent to 1 egg
Preheat oven to 350 degrees. Lightly spray a 1 quart ovenproof casserole with vegetable spray. Place ingtedients in order listed in a bowl and stir to mix. pour into prepared casserole and cover. Set casserole in a larger pan filled with water to a depth of 1 inch. Bake casserole 1 hour. Serve either warm or refrigerate to serve cold.

This is also good with Orange Sauce over the top of each serving!

Orange Sauce Makes 1 cup

2 cups orange juice
1 tbsp cornstarch
1 tbsp water
1 tbsp sugar
1/2 tsp grated orange rind
1 tbsp fresh lemon juice
2 tsp margarine

In a small saucepan over meduim heat cook orange juice, uncovered, till reduced to 1 cup. Mix cornstarch and water in a small bowl. Add some of the hot juice, mix well and pour entire mixture into pan. Add sugar and cook 1 to 2 minutes or till thick. Remove from heat and stir in rind, lemon juice and margarine.
