Rice Pudding

6 cups whole milk
3/4 cup arborio rice
1/2 cup sugar
pinch salt
1/2 vanilla bean
1/4 cup heavy cream
1 teaspoon cinnamon

Mix first four ingredients in a large Dutch oven. Slice vanilla bean lengthwise. Scrape out the seeds. Add bean and the seeds to the milk. Cook and stir over medium heat for 45 minutes or until thick and creamy. Add the heavy cream. Stir well. Stir in the cinnamon. Serve hot or cold.

8 servings.

Creamy Rice Pudding...

1 can (385ml)Original Nestle Carnation Evaporated Milk
1 1/3 cups water
1/2 cup long grain rice
2 eggs
1/3 cup sugar
1/4 tsp.cinnamon
1/2 cup raisins(optional)
1 tsp.vanilla

In heavy medium saucepan combine evaporated milk,water and rice.Cook and stir until mixture boils,reduce heat to low,cover and cook 40 minutes longer.Stirring Frequently.

In small bowl beat together eggs,sugar and cinnamon.

Stir into hot rice mixture with raisins.Cook and stir 3 minutes longer or until mixture is thickened.Remove from heat;stir in vanilla.Serve warm or cool.
