Maple-Roasted Pork and Potatoes

1 (1 ½ lbs.) boneless pork loin roast [I have
even used a cheap pork roast]
4 cloves garlic, peeled
1 ¼ pounds new potatoes, quartered
1 lemon
1 tablespoon olive oil
1 cup pure maple syrup

Preheat oven to 400 degrees. Place roast in
small baking dish. Slice 2 cloves of garlic.
Toss potatoes with sliced garlic and olive oil
and salt & pepper to taste, in another
baking dish, to coat potatoes. Bake both for
50-60 minutes or thermometer is t160
degrees – potatoes should be tender.
Meanwhile, prepare glaze; Grate and then
juice lemon. Place in small sauce pan. Chop
remaining 2 cloves of garlic; add to pan with
maple syrup. Bring to a simmer; cook 10-12
minutes. Brush pork with glaze every 10
minutes during last 30 minutes of cooking.

[The first time I made this I put the potatoes
and garlic in the same pan as the roast. I
made the glaze and poured it over the roast
and potatoes. Then, I baked it for the 60
minutes. It turned out pretty good – the
potatoes were sweet and tender. We like it
either way.] Serves 6-8
