Chinese Pork Roast

1 - 4 pound pork roast
1/4 tsp salt
2 1/2 tsp curry powder
2 tbsp olive oil
1 - 10 3/4 oz can condensed cream of mushroom soup
1 - 16 oz can Chinese vegetables, drained
2 cups cooked rice
1/4 cup cold water
2 tbsp all purpose flour
Soy sauce

Trim excess fat from roast and cut it to fit into your crockpot. Combine salt and 1/2 tsp of the curry powder and rub into the roast. Brown on all sides in hot oil. Put roast on a rack in your crockpot. Combine mushroom soup and remaining 2 tsp curry powder and pour over the roast. Cover and cook on LOW for 8 to 10 hours. Turn crockpot heat to HIGH and bring to a boil about 10 minutes. Remove the roast to a platter. Stir Chinese vegetables and rice into the sauce (remove the rack). Blend cold water slowly into the flour and stir into the saue. Cook and stir till thickened and serve woith roast. Serve with soy sauce. Make 8 servings
