Pumpkin Pie Filling

With this recipe you can do alot of changing to it to make it what you like. My family likes creamy filling so mine is cooked longer. Mom likes chunks in hers so she doesn't cook it as long/ cut it so small. Almost exactly like apple sauce. Sorry this isn't exact .
Peel and cut pumpkin. I go for about 1'' chunks.
Place in heavy pan with water to just cover
cook slowly stirring/ mashing occasionaly
Add A little less then 1/2 the amount of pumpkin is the amount of sugar. ( 4 cups pumpkin to 1 3/4 cups sugar) then sweeten to own taste. ( like apple sauce)
1 tsp lemon juice
1/8 tsp salt
1 tsp cinnimon,
1 tsp nutmeg,
1/4 tsp mace,
1/4 tsp ginger.
again adjust these to your own taste keeping these in proportion
Pumpkin should have some firmness to it when done, but you can still mash it with a fork with no effort.
Place in a freezer bag when cooled down enough for 1 pie.

De-thaw this before cooking your pie ( microwave ). When all dethawed beat with one egg. Pour into uncooked pie shell .

Sorry this isn't exact but it's the only way I know how to make it. ( I don't own a measuring cup!!! that tell ya how I cook!)

Thank you,Otheila. This sounds great. I'm sure it will taste wonderful.I printed it and I'm sure going to try it next fall when pumpkins get ripe.
