Pumpkin Ice Cream Pie

This recipe is AWESOME. I have made this twice and it was a hit both times. YUM YUM and so easy to make!

Pumpkin Ice Cream Pie

1 quart vanilla ice cream or frozen yogurt
1 cup plain canned pumpkin
1/4 cup sugar
1/4 tsp cinnamon
1/4 tsp ginger
1 large or 8 small graham cracker pie crusts

Take ice cream out of freezer and let it become soupy. Put into a bowl with pumpkin, sugar, cinnamon, and ginger. Stir, pour into crust. Put in a level place in the freezer overnight.

In a large mixing bowl, blend:

1 8 oz package of softened cream cheese
1/3 cup packed brown sugar
1 tablespoon pumpkin pie spice

Add 1 15 ounce can pureed pumpkin and mix well.

Blend in 4 cups softened (not melted) ice cream, stirring lightly.

Divide evenly between 2 graham cracker crusts.

Cover each with a layer of plastic wrap and then with a layer of heavy duty aluminum foil. Freeze.

Thaw slightly before serving.
Garnish with whipped cream and ground cinnamon
