Raviolis Using Wonton Wrappers

Raviolis Using Wonton Wrappers

For the filling:
. 2 cups ricotta cheese
. 4 ounces mozzarella (16 ounces altogether if
making this lasagna style)
. 1/2 cup freshly grated Parmesan cheese
. 1/2 teaspoon minced garlic or garlic powder
to taste
. 1/2 tablespoon dried parsley flakes
. 2 egg, lightly beaten (one to use as glue for
edges of wontons after filling)
. Salt and pepper to taste
. 1 - 28 ounce jar of spaghetti sauce (your favorite)
. Wonton wrappers

Mix ricotta cheese, 4 ounces mozzarella
cheese, grated parmesan, garlic, parsley,
1 beaten egg, salt and pepper and set

For the Dough:

Use Wonton Wrappers. (or can make
homemade dough.)

Place wonton wrappers on the counter.
(This recipe made 22 raviolis for me) Fill
using about 1 - 2 tablespoons of filling.
Wet edges of the wonton with beaten
egg for glue to hold wonton together
when boiling. Cover filling with another
won ton wrapper. Press all air bubbles
out and seal well. Bring a pot of salted
water to the boil. Add ravioli's and boil
just until they rise to the top. Only cook
about 4 at once as this cuts down on
the boiling temperature. Cook for about
30 seconds after they rise to the top of
the pot. Remove from heat and drain.
(I used a piece of freezer paper, waxed
side up to drain.) Continue boiling rest of
raviolis. Serve with your favorite sauce
that has been heated. Pour over raviolis
and sprinkle with parmesan cheese.

*Hint: * The way I did it today was to
make them like a dish of lasagna. It was
fabulous. As the raviolis were cooked, I
laid out a large piece of freezer paper
with the waxed side up. As the raviolis
were cooked, I used a large slotted
spoon and put each ravioli down on the
paper, to cool slightly. I took a 9 X 13
glass casserole dish and put a little
spaghetti saucein the bottom of the
dish, just enough to cover, maybe
1/4 - 1/3 cup. Then I put 6 raviolis (they
are pretty big) in the dish, some more
sauce on top of raviolis and a little bit
of mozzarella sprinkled on to the sauce.
Top with 2 more layers (using 18 raviolis)
repeating as I just mentioned. Pour the
rest of the sauce on the top of the
raviolis, but don't put on the rest of the
cheese on top till the dish is hot. Bake
400 degree oven till hot and bubbly.
Place rest of mozzarella on top of the
hot dish and melt in oven.

Serve with a salad and hot crusty
buttered bread and you have a really
super meal.

To make these for the freezer, flash
freeze on a parchment lined pan so they
are not touching. Place in a Ziploc bag
when frozen.
