Easy Salmon Fettuccine

This recipe was originally posted by Bibly in July, 2013 What's for Dinner thread.

Easy salmon fettuccine

Punnet cherry tomatoes (approx 10-12)
Fettuccine
Thin salmon pieces/slices
Handful of grated cheese
Broccolini (I used broccoli cut into small flowerettes)
Parsley and oregano (I had fresh parsley and dried oregano)
2 Shallots cut thinly on an angles.
Olive oil
Salt and pepper.

Oven to 180*C to heat
Pot of water on to boil for pasta.
Cut cherry toms in half and place on a tray sprinkle olive oil, salt and pepper over and slightly toss making sure cut sides are up before popping in the oven (10-15 mins)
Put pasta into boiling water
Par boil broccoli till just tender.
Put salmon slices/pieces into a fry pan with a touch of olive oil, very lightly cook and turn.
Take toms out of oven and put in with salmon, turn down heat, add shallots.
Drain and put fettuccine in with salmon, toss in broccoli, herbs and cheese, mixing carefully.
Sprinkle a smidge more olive oil on top and serve straight away.
Great with crusty bread.

Salmon gave a great flavour and next time I will try with small chicken pieces.
