Linguini With Clam Sauce

Linguini With Clam Sauce

1 Tbsp. Butter
2-3 cloves (1-3 tep.minced) garlic
1 can diced tomatoes (or Rotel tomatoes withgreen chilies)
1/4 tsp. dried oregano (fresh, use 1/2 tsp. minced)
3 cans of minced clams (can get by w/ 2) drain and reserve liquid.
2 chicken bouillion cubes
1/2 cup dry white wine (cooking wine, but can add water if no wine)
1 pkg. frozen spinach (cooked, cooled & moisture squeezed out)
1 cup parmesan cheese shredded (best if fresh, canned ok)
1 lb. cooked & drained linguini

In a large pot boil water for linguini and cook as directed.
While water is on, in another pot melt butter and sweat the garlic. DO NOT LET IT BROWN (usually 1 or 2 minutes on med. heat). add juice from clams, bouillion, oregano. wine, and spinach. Simmer so flavors mingle. Drain linguini (when al dente) set aside. Salt and pepper to taste the sauce, add the clam meat. Add to linguini and the cheese. Toss untill well blended. Add more parmesan cheese if desired and serve.
