Happy face End of Season Roasted Tomato Pasta Sauce! Easy & Yum!

It is the end of the growing season and I purchased a flat of tomatoes at the farmers market. Some were still greenish, some were near the end. I also had giant zucchinis from the garden to use up too. I came up with this sauce that is so simple and adaptable, but even more - it is delicious and healthy!

Roasted Tomato Pasta Sauce

wash and quarter as many tomatoes will fill a cookie sheet.
Roughly chop an onion
smash a couple of cloves of garlic
Cube up the zucchini
dice up some celery
old carrots? throw them in!
roughly chop a pepper
got some chilis or jalepenos? dice and toss them in too
Any other veg? add em in

toss with some olive oil, s&p and italian seasonings.

Put cookie sheet into 400 oven for approximately 45 min - 1 hour, when things are starting to char just a little. Cool and spoon into a food processor and blend until smoothish consistency. Pour into a bowl and when all has been processed, stir with a spoon. You can heat it up and eat it or put into baggies and freeze.

It is so versitile, you can use any vegetables you like and it will turn out to the most delicious fresh tasting sauce!
