Farfalle with Tomatoes, Oinion and Spinach

This recipe was orginally posted by Sammi1961 in the June 2011 What's for Dinner thread.

Farfalle with Tomatoes, Onions and Spinach

Ingredients:

8 ox uncooked farfalle pasta (I used a bit more than that)
1/4 tsp salt
2 T olive oil, divided
1C vertically sliced onions
1 tsp dried oregano (I used a little more)
5 garlic cloves, sliced
2 C grape tomatoes, halved
1! T white wine vinegar
3 C baby spinach
3T shaved Parmigiano/Reggiano cheese (I used freshly grated parmesan)
1/4 tsp freshly ground black pepper
3/4C crumbled feta cheese

Cook pasta according to package directions & drain

Heat 1 T oil in a large non-stick skillet over med. high heat. Add onion, oregano and saute' 12 minutes or until lightly browned. Add garlic and saute' 2 minutes. Add tomatoes and vinegar; saute' 3 minutes or until tomatoes begin to soften. Add pasta and spinach and cook 1 minute. Remove from heat and stir in Parmigiano-Reggiano cheese, 1/4 tsp salt and papper. Sprinkle with feta.

I added a bit more parmesan than required just causeI like it. I also made sure the spinach was a bit wilted. My whole family loved this recipe and there were no leftovers :-( (I was hoping for leftovers for lunch LOL)

I have tried this recipe and it was fantastic. I've actually made it two times already I loved it that much. I didn't change any of the ingredients, I made it exactly as the recipe stated. This has become my new favorite dish.

fish, I'm thinking that adding some strips of grilled chicken breast would be good too. I would be fine without meat but dh thinks he needs some. Have you tried it with meat?

Yes I tried it with chicken and with hot italian sausage. Both were great! I like either way but if I make it for a meal I do make chicken or sausage with it. I have made it several times now since I tried it.
