Wacky Chicken-Asparagus Bake

1 pkg. (12 oz.) Wacky Mac (pasta)
1 Tbsp. vegetable or olive oil
1 red bell pepper, chopped
1 onion, chopped
1 large clove garlic, minced
1 1/2 cups ricotta cheese
1 can (10 3/4 oz.) condensed cream of asparagus soup
2 cups (8 oz.) shredded cheddar or Colby-Jack cheese, divided
2 eggs, lightly beated
1/4 tsp. ground black pepper
2 med. chicken breasts, grilled and sliced
1 pkg. (10 oz.) frozen asparagus cuts, thawed
Preheat oven to 350. Cook Wacky Mac according to package directions; drain. Meanwhile, heat oil in medium skillet over medium heat. Add bell pepper, onion & garlic; cook & stir 5 minutes. Combine ricotta cheese, soup, 1 cup cheddar cheese, eggs and black pepper in large bowl; mix well. Stir in chicken, asparagus, bell pepper mixture & Wacky Mac. Spread in large, greased casserole dish; top with remaining 1 cup cheese. Bake 35-40 minutes or until center is sest and cheese is bubbly and lightly browned. Let stand 5 minutes before serving.
Makes 6-8 servings.
*I was not able to find cream of asparagus soup at Wal-Mart but found it at Food-4-Less.
*Wacky Mac is a type of pasta that I found at Wal-Mart by the spaghetti noodles.
*I also boiled the chicken until done, cut up & mixed it into the dish before putting in oven to bake.
Don't go back for less just because you're too impatient to wait for the best.
