Pierogi Lasagna

1 onion chopped (1 cup)
1 large tomato, chopped (1 1/2 cups)
1 jar (16 oz.) Alfredo pasta sauce
2 pkgs (16 oz. each) pierogies (24) cooked & drained
1 cup drained roasted red peppers
1 pkg (10 oz.) frozen chopped spinach, thawed, squeezed dry
Preheat oven to 350. Coat 2 qt. baking dish & nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add onion and 1 cup tomato; cook, stirring, 5 minutes. Stir in sauce and 3/4 cup water. Spread 1/2 cup sauce in baking dish; top with 8 pierogies, peppers, 1/2 cup sauce, 8 pierogies, spinach, 1/2 cup sauce, remaining pierogies and sauce. Cover; bake 25 minutes. Uncover; bake 10 minutes. Let stand 10 minutes. Top with remaining tomato.
*I was unable to find piergies so I used frozen tortellini in its place. I used 2 (19oz.) bags. I liked it.
Don't go back for less just because you're too impatient to wait for the best.

This was easy to make. I liked using Alfredo sauce instead of a tomato sauce.
I will be making this again.
