Spaghetti and Cauliflower Sauce

1 head cauliflower, about 2cups florets
1 zucchini cut in strips (optional)
2 tblsp. olive oil
4 garlic cloves
1/2 tomato diced (optional)
1/2 onion minced
1/4 cup chopped parsley
1/2 cup parmesan cheese
1 pound spaghetti or rotini macaroni
1 pound cooked large shrimps

Cut cauliflower into florets and steam until tender but not mushy. In a large pan heat the oil on medium high and add the garlic & onion until lightly golden. Add the cauliflower & tomato to pan and with the back of a spoon or heavy spatula, break the cauliflower into small pieces, while stirring to coat with the garlic and olive oil. Season to taste with salt and pepper and set aside. Cook the spaghetti in boiling water. When finished, reserve 1/2 cup of the cooking water and drain the spaghetti. Set aside. Turn heat to medium on the cauliflower and add the reserved pasta water, and stir over heat until the mixture begins to emulsify. Add the spaghetti to the cauliflower and remove the pan from the heat. Mix thoroughly. Add the parsley and parmesan and mix until the spaghetti is well coated.
Can add the cooked shrimp or eat on the side.
Serves 4-6
Give the sauce time to soak into the pasta before serving.
