Spaghetti Squash with Chunky Tomato Sauce
2 lbs lean ground beef (I'll use ground turkey breast mixed with some lean ground round)
1 cup chopped onion
1 cup chopped gren pepper
4 cloves garlic, minced
1- 14 1/2 oz cans tomato sauce
1/2 of a 6 oz can tomatp paste
1 tbsp dried Italian seasoning
1/4 tsp pepper
Cooked Spaghetti Squash (recipe follows)
1/2 cup Parmesan cheese
In a 4 qt Dutch oven brown beef and ground turkey breast, then rinse under hot water to remove any fat. Return to cleaned Dutch oven and add onion, sweet pepper, and garlic and cook till veggies are tender. Add undrained diced tomaotes, tomato suace, tomato paste, Italian seasoning and black pepper. Bring to a boil and reduce heat. Simmer, uncovered 15 minutes stirring occasionally. After spaghetti squash is ready serve sauce over spaghetti squash and sprinkle with parmesan cheese. Makes 12 servings
Cooked Spaghetti Squash
Prick a 2 1/2 to 3 lb. whole spaghetti squash in several places with a sharp knife. Place spaghetti squash in a microwave safe baking dish. Microwave, uncovered on HIGH power 10 to 15 minutes or till tender. Let stand 5 minutes. Halve squash lengthwise and remove seeds. Using 2 forks shred and separate the squash pulp into strands.
