Does anyone do OAMC/bi weekly cooking and not make casseroles? The only casseroles we eat are manicotti or lasagna due to food allergies.

Good question Connie, we aren't big casserole eaters either and I can forget trying to serve soup or chili more than once a week.

I've done things like making extra meatloaves to freeze, cooking a turkey and packaging in slices and chopped for other things. There's only two of us but I still cook like the kids are still here sometimes so I have several main dishes in the freezer usually. Beef and pork roasts in slices and chopped for stirfry, barbeque, etc. It's really handy to cook up some chicken and chop for chicken and noodles, chicken salad. I use all this stuff for casseroles too but I see you can't.

I am taking notes and writing down recipes I know we can eat. I will get this pulled together.

Connie, one thing my mother does is braise up a mess of chickens, take the meat off the bones and package the meat with the broth into meal sized portions. From there it is twenty minutes to reheat the chicken, make some rice or noodles for the 'sauce' and five minutes for microwave veggie sides. Pretty quick meal, no oven needed.
