Need vegetable ideas for OAMC

Hi, I am brand new to this forum. I am in a meal swap and I need some ideas for side dishes and/or vegetables that freeze well. Any help would be great!

Veggie Medley
combine one can cream of chicken soup with 1 cup diced onion and 1 1/2 cups diced celery. Toss 16 oz. frozen mixed veggies (break it up if it's in a big clump!) with 3 cups toasted bread cubes. Combine veggies/bread crumbs with soup/onions/celery. Place the whole mess in a 1 gallon freezer bag. Removed as much air as possible, seal and freeze. Don't forget to label your bag!

To serve, thaw and place in a greased casserole dish. Top with 2 cups grated cheese and bake at 350 for 30 minutes.
