A few freezer meals for sick days

This year, I've seemed to catch every cold going around!

Yesterday, had a temp (100.6); didn't feel like doing anything.

The freezer saved us!

I am not yet ready to OAMC, but I've been trying a few recipes, doubling, and freezing. So, I have about 7 meals stocked up.

Yesterday, I grabbed 2 (carne adovada and chicken-and-veggies), put them in a stockpot of water to thaw, then just dumped them in casserole dishes & baked.

The kids ate chicken and veggies over toast. Dh ate chicken and veggies over toast AND carne adovada. He took leftovers for his lunch today.

So, even if you don't OAMC, it's sure worth while to have a few freezer meals prepared.

Right now I have chicken broth with chicken in it in my freezer for a quick soup.

In the past, I've browned ground meat for chili, tacos...etc so that we could throw something together.

I've also made breakfast burritos, pancakes and waffles ahead of time. The burritos were a big hit when the kids came home after school and wanted a quick snack.


I'd like to come up with some meals to freeze for those days when I'm just not motivated to cook and my first instinct is to go out to eat.

Any suggestions out there for easy meals that I can make ahead of time and freeze --but they don't taste like they've been frozen before?
