Banana Coffee Cake Muffins (milk free)

  • Banana Coffee Cake Muffins

    2-1/2 cups flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 tbs. instant coffee
    1 tbs. hot water
    1-1/3 cups mashed bananas
    1 cup butter or margarine, softened
    1-1/4 cups sugar
    1 egg
    1 cup semi-sweet chocolate chips or pieces

    Preheat oven to 400 degrees. Grease 2 1/2-inch muffin pan cups. Stir together flour, baking powder, soda and salt in small bowl. Dissolve instant coffee in hot water. Stir in mashed bananas. Beat butter and sugar in large bowl. Add eggs. Mix in banana mixture. Stir in flour, etc., until well blended. Fold in chocolate pieces. Bake 25 to 30 minutes. Remove from pan to cool.
