Apple Bacon Muffins

  • 1/2 cup butter, softened
    1/2 cup brown sugar, packed
    2 large eggs
    2 tsp baking powder
    1/2 tsp salt
    2 cups all purpose flour
    2 tbsp cinnamon
    2/3 cup milk
    3/4 cup finely chopped apple
    1/2 cup bacon, drained and diced

    Heat the oven to 375 degrees. Spray muffin cups with nonstick cooking spray.In a large mixing bowl with electric mixer, cream butter and brown sugar till light. Beat in the eggs till well blended
    Combine flour, baking powder, salt, and cinnamon. Add to the creamed mixture, alternating with the milk. Stir just till blended. Fold in the apple and bacon tilll blended.Spoon into the prepared muffin pan, filling the cups about 3/4 full. Bake for 18 to 22 minutes, until lightly browned.Cool in the pan about 10 minutes, then remove to a rack to cool completely.
