Pumpkin Doughnut Holes

3 1/2 cups flour
4 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1 cup sugar
4 tbsp softened butter
1 egg
2 egg yolks
1 tsp vanilla extract
1/2 cup milk
1 tbsp fat free sour cream
1 cup pumpkin (not pumpkin pie mix)

Combine the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg and set side. In another bowl cream butter and sugar; add egg and egg yolks. Then add vanilla, milk and sour cream; then add the pumpkin. Combine with the dry ingredients. Chill at least 1 hour. Roll into 1 inch balls, In a cast iron skillet heat some oil for deep frying. Heat the oil to 375 degrees and drop doughnuts into oil and cook evenly. Cook till browned and remove with a slotted spoon. When you can handle them roll in a cinnamon sugar mix.

I made the pumpkin donut holes on Sunday.
I followed the recipe except I put too much milk in so added more flour to make a soft batter instead of a moldable one. I used grated frozen ginger instead of powdered ginger.

I dropped the batter by the teaspoon into the hot oil, eight at a time. They puff up almost double or triple! And they flip themselves! It took about two minutes to cook each batch so the centers were cooked, flipping them a few times during cooking.

Some of the more creative ones formed animal shapes as the batter might not have come off the spoon exactly as a ball. My husband and I had a lot of fun with them, seeing swans and octopus and other fun animal shapes, much like we look at clouds.

The donut holes were dipped in powdered sugar and cinnamon sugar. The ones we didn't dip turned out the best over the next few days. The powdered sugar ones tasted good but the sugar 'melted', we don't have A/C. They also got chewy over the next few days, but that is all right.The tastes and the spices are terrific with this recipe.

We were able to let the oil settle out and save the reserved oil for next time.
