Cheddar Biscuits
4 cups all purpose flour, plus enough for surface
8 tsp baking powder
2 tsp salt
2 tsp ground pepper
1 1/2 sticks unsalted butter, cold and cut into small pieces (is use salted butter cut salt back to 1 tsp)
2 cups buttermilk
1 cup cheddar cheese, grated

Preheat ovento 450 degrees. In a large beol, combine first four ingredients. Cut in butter till mixture resembles coarse crumbs. Add buttermilk and cheddar and stir just till mixture comes together. Turn dough out onto floured surface and divide dough into halves and pat each into a rectangle. Set aside one rectangle and cover with a clean towel. Using your hands, fold, flatten and repeat till dough has been folded over 4 times. Pat out to 1" thick. Cut biscuits using a 2" cutter. Repeat with remaining dough. Reroll any scrap till all dough is used. Transfer biscuits to baking sheets and bake till golden, about 14 to 18 minutes. Makes about 24 biscuits.

cat lover i've made these myself and they are good their good with any type of cheese and i have put diced ham in them finely chopped pieces.

I have made a muffin that has has bacon in it and a few othere things as a take along breakfast. Now that you mention putting chopped ham in these biscuits I'm thinking with some ham or bacon and warm them up wrap in foil that these too would make a great take along breakfast!
