Choc chip muesli rounds
ingredients
1 ¼ cups (125 g) rolled oats
1 cup (100 g) desiccated coconut
½ cup (70 g) sultanas
½ cup (150 g) honey
1/3 cup (80 ml) rice bran oil
1 tablespoon boiling water
2/3 cup chopped dark chocolate or choc chips
Preheat oven to 160°C (315°F) fan-forced.
Mix rolled oats, coconut and sultanas in a bowl. In a separate bowl, mix honey, oil and water until honey is dissolved. Mix into dry ingredients until combined, and then add chopped chocolate.
Use muffin tins to bake the muesli rounds in. Cut out circles of baking paper, approximately 12 cm in diameter, to cover the inside of each muffin tin (fold the paper several times, so you only need to cut the circle once).
Place the mixture into the tins and using your fingers or the back of a spoon, press the mixture firmly into the tin.
Bake for 25 minutes.
Leave to cool completely in the tin. Once cooled, remove the rounds in the baking paper and then carefully remove the baking paper from each round.
Store in the refrigerator.
