Apple 'n' Berrry Muffins

  • 2 cups self raising flour
    1 cup almond meal
    a pinch of baking powder
    3/4 cup brown sugar
    1/2 cup shredded coconut
    1 small to medium apple grated (I used gala it's what I had)
    1 egg
    2/3 cup veg oil
    1 cup buttermilk (I used 1 cup milk soured with 1 tab vinegar)
    1 1/4 cup frozen mixed berries.
    Method:
    Mix dry ingredients in a largish mixing bowl
    In a larg jug measure oil, crack in egg, add soured milk, apple,
    and mix. Add to the dry ingredients. Add berries.
    Mix till just combined or the muffins will be tough when baked.
    Pop in papers in muffin pan and sprinkle extra shredded coconut
    over the top if you wish. It made 14 medium sized muffins for me.
    Bake at 190*C for 25-30 mins. Cool for 5 mins in pan then pop onto
    a cake cooler.
    You could use a couple of mashed bananas instead of apple.
    These are not a really sweet muffin, you could make sweeter by
    sprinkling raw (demerara) sugar on top with the extra coconut or
    serve with a dusting of icing sugar.
    They are a hit in my house, yum!
