Fresh Peach Muffins

  • 1 cup chopped peeled fresh peaches
    1 tsp lemon juice
    1 cup milk
    1 egg
    1/4 cup margarine, melted
    2/3 cup splenda
    1 tsp cinnamon
    3 tsp baking powder
    2 cups UNSIFTED all purpose flour

    Sprinkle peaches with lemon juice and set aside. Mix remaining ingredients adding flour last. Fold in fruit. Fill greased muffin tins 2/3 full. Bake at 450 degrees for 15 - 20 minutes.

    You can also use mini bread pans and cook the same time.
