Lemon Poppy Seed Popovers

1 egg plus 2 egg whites
1 cup all purpose flour
1 cup milk
1 tsp grated lemon zest
1 tsp poppy seeds
1/2 tsp salt

Heat oven to 450 degrees. Grease a 6 cup popover pan OR 8 medium size (2 1/2 x 1 1/4) muffin cups. Beat eggs slightly in a bowl. Beat in remaining ingredients just till smooth, but DO NOT overbeat. Fill cups 1/2 full. Bake 20 minutes and then reduce temperature to 350 degrees. Bake about 20 minutes longer or till deep golden brown. Immediately remove from the cups. Serve hot.

I have never heard of a "popover" that's why I decided on this recipe so I had no idea on how it would look, turns out these come up very similar to an English Yorkshire pudding only with less calories (oil mainly).
The poppyseed and lemon was a nice twist, definitely a cook and serve straight away as a side with a meal,even with a salad in summer.
I'd make again.
