Double-Chocolate Banana Bread

seleach originally posted this recipe in What's for Dinner February 2009.

Double-Chocolate Banana Bread.

1 c sugar
2 eggs
1/3 c vegetable oil
1-1/4 c mashed ripe banana (about 3)
1 tsp vanillia
1-1/2 c all-purpose flour
1/2 c unsweetened cocoa
1 tsp baking soda
1 c semisweet chocolate chips

Heat oven to 350, spray bottom of 8x4 loaf pan with cooking spray.
Beat sugar, eggs and oil in large bowl at med speed until mixed. Beat in banana and vanillia at low speed. Combine flour, cocoa,, and baking soda in med bowl. Beat into banana mixture at low speed just until mixed. Stir in chocolate chips.
Spoon batter into pan. Bake 60-70 min or until toothpick inserted in center comes out clean. Cool 10 min. Remove from pan, cool completely on wire rack.

Id like to award this recipe by seleach a blue ribbon. We all enjoyed it. It was easy to prepare and I had all the ingredients already.
Thanks for sharing.
