Cinnamon Streusel Muffins...

  • 2 c. flour
    1/3 cup light brown sugar
    1 tsp. cinnamon
    5 TBSP. melted butter
    3/4 tsp. baking powder
    1/8 tsp. baking soda
    1/8 tsp. salt
    1 cup sugar
    1/4 cup egg beaters
    1 tsp. vanilla extract
    1 cup sour cream

    Combine 1/2 cup flour, brown sugar, and cinnamon. Stir in 3 TBSP. butter until crumbs form; reserve streusel. In another bowl combine remaining flour, baking powder, soda, and salt. In third bowl combine sugar, sour cream, egg beaters, butter, and vanilla. Add flour mixture just until combined. Fill greased muffin cups 1/3 full. Sprinkle each with 2 TBSP. streusel. Top with remaining batter, divide evenly and sprinkle with remaining streusel. Bake 15-18 minutes @ 375.

  • This recipe was awesome! I made it and both my family and my daycare children loved it! I will definitely be making it again. The only thing I changed was I used one egg instead of the egg beaters. (I like anything with a struesel topping so these were definitely my kind of muffin!)
