Banana Bread

This recipe was originally posted in September 2007 What’s for Dinner by Debknechtel
Banana Bread

blend
1/3 cup shortening
2/3 cup sugar
Beat in
1-2 beaten eggs(ialmost always use 2)
1-1 1/4 cup mashed ripe banana pulp
Add
1 3/4 cup flour
2 1/4 tsp double acting baking powder
1/2 tsp salt
fold in until all mixed

If you want you can add some chopped nuts, chocolate chips etc.

Pour into 2 greased loaf pans and bake 350 for about an hour or until toothpick comes out clean.

I usually double the recipe and make 2plain 1 with nuts and 1 with chocolate chips then freeze them in halves.

Congrats Debbie. We like banana bread and I am going to be trying this one.

Quick/ easy and good....Makes a nice moist banana bread. The Grand-kids had it with vanilla ice cream. Dh and I had ours with a mug of coffee.
