You can turn just about any quick-bread recipe into a muffin recipe. The only thing you have to adjust is the baking time.

My kids like mini-muffins. Usually quick-bread recipes that make one loaf of bread will yield 3 to 4 dozen mini-muffins. Bake about 20 minutes at the suggested temperature for your recipe.

Not everyone likes nuts in their muffins. If you make mini-muffins, you can get around this by placing a walnut half on TOP of the muffin batter before baking. You still get the flavor and crunch of the nut, without all the chopping, and it's easy to see which muffins have nuts and which don't.

My tip is not to over mix them.
I like your quick bread idea into muffins will have to see what quick bread recipes are around for something new in flavours.
I love any recipe you can make a heap of and freeze for later use.
