Cinnamon Pecan Muffins

  • 1 1/2 cups flour
    1/2 cup sugar
    2 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp salt
    1/2 cup chopped pecans, lightly toasted
    1 egg
    1/2 cup milk
    1/4 cup applesauce

    Preheat oven to 400 degrees . Grease 9 muffin cups. Half fill the remaining cups with water. In a large bowl, mix the dry ingredients with a wire wisk. Mix in the pecans. In a small bowl, combine the wet ingredients.Add to the large bowl. Mix only until mixture is moistened. Fill muffin cups with batter. Bake for 20 to 25 minutes.
