Fruit Muffins

as posted by sueanne in the September 2005 WFD? thread

Fruit Muffins

2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
1/4 cup shortening
1 cup milk
1 cup apple -peeled, cored and chopped

Directions
1- Preheat oven to 400 degrees. Lightly grease 12 muffin cups.
2-In a large bowl, sift together the flour, baking powder and salt.
3. In a separate bowl, cream together sugar and shortening. Stir the flour mixture into the
sugar mixture alternately with the milk. Fold in
the fruit. Pour batter into prepared pans.
4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Any type fruit may be added. I used peaches that i had frozen & strawberries ground up. Also mixed in some walnuts. Baked it in a 10 x 12 pan instead.

Easy to make and was so good. I made it with the apples but am going to try it with other fruits.
