Seriously Yummy Cinnamon Rolls!

I had this huge urge for Cinnamon rolls the other day, which is a little weird for me, and we were snowed in, so I had to make them from scratch... I have never made them before, so I found a recipe that I had ingredients for and changed some things, and ohmigosh! I am really proud of myself, they were awesome! I brought some to work (as I made way too many) and my coworkers devoured them! They even cleared the pan and took some home with them. Now, I consider myself to be a good cook, but never had such rave reviews before!

Tasha's seriously yummy Cinnamon Rolls

1 cup warm water
2 1/4 oz packets of active dry yeast
2 1/2 cups +1tsp granulated sugar
2 tsp salt
1 cup warm milk
2 1/3 cups melted margerine
2 eggs, slightly beaten
8 cups all-purpose flour
3 Tbsps ground cinnamon
1 1/2 cups pecans (if you like them)
4 cups powdered sugar
2 tsp vanilla extract
1 tsp maple extract ( if you don't like maple just use 1/4 of the amount, or leave it out)
6 Tbsps hot water

Dissolve yeast and 1 tsp sugar in warm water; set aside

In a large bowl, mix 2/3 cup sugar, milk, 2/3 cup melted margarine, salt, eggs; stir well and add to yeast mixture.

Add half the flour and beat until smooth.

Stir in enough of the remaining flour to make a slightly stiff dough

Turn out onto a well-floured board and knead for 8 minutes.

Place dough in a greased bowl, cover and let rise in a warm place until double in size. Just over an hour.

Punch down and let rest for 5 minutes.

Roll dough out onto floured surface into a 15x20 rectangle

Brush 1/2 cup melted margarine over dough.

Sprinkle nuts, if you're using them.

Roll up the dough and pinch the edge to seal.

Cut the roll into about 15 slices

Coat bottom of a 13x9 pan with 1/2 cup melted margarine, then sprinkle with 1/3 cup sugar

Place cinnamon roll slices close together in pan.

Cover pan and allow to rise in a warm place for 45 minutes.

Bake in a 350 degree oven for 25-30 minutes, or until golden brown.

Stir together 2/3 cup melted margarine, powdered sugar, and vanilla and maple extracts.

Stir in hot water 1 Tbsp at a time until glaze reaches desired consistency.

Spread prepared icing over slightly cooled rolls.
