Banana Quick Bread (heart-healthy--FAT FREE)

    1/2 cup applesauce
    1 cup sugar
    3 ripe bananas, mashed
    1 tsp vanilla extract
    3 egg whites
    2 cups flour
    1 cup oatmeal (old-fashioned or "quick")
    1/4 cup wheat germ, optional
    1 tsp baking soda
    2 tsp baking powder
    1 tsp cinnamon
    1 cup walnuts, chopped, optional but delicious!

    Mix sugar, applesauce, bananas, vanilla & egg. Add remaining ingredients (except nuts) until well mixed. Fold in nuts.
    Pour batter into greased loaf pan.
    Bake at 350, 50 to 60 minutes. It will be VERY brown on top.

    Note: I usually just use 1 egg white + 1 whole egg. The finished product is the same, just with a little more fat in it.
    Recipe doubles well.

    Question - do you use the wheat germ when you make it?
  • If I happen to have wheat germ, I put it in. If I don't, I skip it. No one seems to notice the difference but I like to add it since it's a healthy ingredient.
