ISO Breakfast Muffins
 
Has anyone got any breakfast muffin recipes? Fruity or oaty would be nice, thanks:)

I made these this week and they were excellent:

REFRIGERATOR SWEET MUFFINS

4 1/2 cups flour
1 cup brown sugar
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
3/4 cup vegetable oil
1 1/2 teaspoons vanilla
3 eggs
3/4 cup mini chocolate chips or any fruit of choice

Preheat oven to 375. Grease the bottom of two muffin pans (or use muffin liners). Mix ingredients together. Fill muffin pan 2/3 full. Sprinkle on tops of muffins: 3 tablespoons sugar and 2 tablespoons brown sugar. Bake at 375 for 15-20 minutes. Yield: 24 muffins. Can store in refrigerator for 5 days.

You can also halve this recipe; use 1 whole egg and 1 egg white.

Breakfast Muffins

1 3/4 cups all-purpose flour
1/3 cup white sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg
1/3 cup butter, melted
1 cup fresh blueberries

In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, egg, and butter; mix until ingredients are moistened, do not overbeat. Stir in fresh fruit. Spoon batter into twelve greased muffin cups. Bake at 400 degrees for about 20 to 25 minutes, or until tops spring back when lightly touched. Serve warm.

French Breakfast Muffins

1 1/2 cups all-purpose flour
1/2 cup white sugar
1 1/2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 egg, lightly beaten
1/2 cup milk
1/3 cup butter, melted
1/4 cup white sugar
1/2 teaspoon ground cinnamon
1/3 cup butter, melted

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners. In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture; stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups. Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar, cinnamon When muffins are finished baking, dip tops of muffins in the melted butter, and then in the cinnamon sugar mixture. Serve warm.
