I got this recipe off of the Rosie show. The lady who made it won a contest for the best SPAM dish.

2 (12 oz) can SPAM
2 eggs
2/3 cup oatmeal
3/4 cup milk
1/3 cup brown sugar
1 teaspoon prepared mustard
2 tbs white vinegar
1 tbs water
4 cups prepared instant mashed potatoes

preheat oven to 350. In large bowl, grate SPAM. Add eggs, oatmeal and milk; mix well.Lightly spray a regular size muffin tin. Fill each cup two-thirds full with meat mixture. Lightly press mixture into cups. In small bowl whisk the brown sugar, mustard, vinegar and water. Spoon glaze mixture over meat mixture. Bake 25-30 minutes or until set. Top each cupcake with potatoes. Return pan to oven and broil 2-3 minutes or until potatoes are lightly browned. Let set at least 5 minutes before removing from pan.
