Debbie's Meatloaf**

This recipe was orginally posted by Cat lover in the April 2011 What's for Dinner thread.

Debbie's Meatloaf**

3 pounds ground chuck (I also sometimes mix in a combination of ground turkey breast or ground round to total amount of 3 pounds of meat)
2 egg whites
1 large chopped onion
1 large bell pepper, chopped
1 cup uncooked oatmeal (quick OR old fashioned)
1 - 15 oz can tomato sauce

Mix all together except the tomato sauce. Either make into one large loaf or make into small patties, pour tomato sauce on top of each patty or the loaf. To cut down on the fat from the meatloaf cook it on a rack in your roaster; this works best for the one loaf. Add 1/2 can of water around the loaf or the patties, but do not pour on top of them! Bake at 350 degrees about 1 1/2 hours OR cook in a covered skillet on the stove till done (this way works best with the smaller patties).
Roasted carrots and potatoes are good with this, peel OR use unpeeled potatoes and pour 1 can (15 oz) tomato sauce combined with 1 can of water on top of them;cover and bake along side of he meatloaf. I like to put them into a separate roaster so they aren't cookin in the fat from the meatloaf.

** If cooking in the crockpot I do it on LOW for 8 hours, HIGH for 4 to 5 hours. I also place the meatloaf on a rack in my crockpot.
