Pork Apricot Curry

This recipe was orginally posted by Bilby in the Sept 2010 Whats for Dinner thread.


Pork apricot curry

Pork diced portions of your choice
(I used 3 pork chops with fat trimmed off)
1 rounded tablespoon curry powder
1 tin apricot nectar (400ml)
1 sliced onion
1 tablespoon cornflour (with a little water to make paste)

Sear and seal pork with onion.
Sprinkle in curry powder and stir in.
Mix in apricot nectar and simmer on low on stove top (until tender)
Or pop into a casserole dish and pop in a mod oven until tender.
15-20 mins before serving/cooked add the cornflour but only put in as much
as you need to make it thick enough for your ideal serving over rice.
Serve with veg of your choice.
