Meatballs Hawaiian

as posted by cat lover in WFD 10/05:

Meatballs
1 8-oz can pineapple chunks (no sugar added); drained, reserving juice
1/4 cup brown sugar
2 tbl cornstarch
1/4 cup white wine vinegar
1 tsp soy sauce
2 green bell peppers, sliced into strips or rings

In a nonstick skillet cook meatballs over medium heat till browned. Set aside and keep warm. Cook enough rice for how many you are serving, omitting salt and butter. Mix reserved pineapple juice with water to make 1 cup. Pour into skillet. Add brown sugar, cornstarch, vinegar, and soy sauce. Heat, stirring constantly about 3 minutes or till sauce thickens. Add meatballs, pineapple chunks and bell peppers. Stir to coat evenly with sauce. Cover and simmer 10 minutes and serve over rice.

when making the Italian Meatballs

When you make the Italian Meatballs you can marinate them in with your spaghetti sauce on the stovetop and it gives them a great flavor. I make these to go with spaghetti, or for meatball subs. They turn out great. Hope you enjoy them.
