Well today I made the Bisquick Mix! Very easy and quick!:) Then I tried the pancake recipe and the kids thought they were great !:heart:

Oh good! I always liked the pancake recipe too, but didn't care for the biscuits. HOWEVER I am not much for flaky biscuits, I have never liked them. I'm a bread person, yum. :) When we go to KFC my hubby always gets to eat my biscuit, gag.

melt-in-your-mouth pancakes !!
These are the best pancakes that Ive ever made. They turn out nice and fluffy, not heavy. I found the recipe in a magazine in an ad for Betty Crocker. They freeze well too :)

Melt-in-your-mouth Pancakes

2c. Bisquick
1c. milk-I used 2%
1 T sugar
2 T lemon juice
2 t baking powder
2 eggs

Stir all until blended. Cook on hot griddle Enjoy !!

thank you for the great recipes and reminding me of all the uses for that old standby, biscuit mix. i always make my own biscuits from scratch but, over the years had forgotten how versatile this basic and easy to make mix is. I admit to sometimes being promifligate and making the mix with butter when i want a especially rich biscuit to serve with a "dunking" meal, usually for company. sorta showing off i guess.

Just a little note...I always use a biscuit mix to make my pancakes from...the kids like it better.

I used to use Pioneer baking mix, but they discontinued it. However, using their recipe and my homemade biscuit mix (similar recipe to yours), the pancakes are great!

Their recipe added 1/2 tsp vanilla flavoring and 1 Tbsp. sugar to the basic ingredients you listed for pancakes. I experimented with mine and found that we like 1 tsp. vanilla and 2 Tbsps. sugar in our pancakes.

Sometimes it pays to play around with recipes. Just thought I'd pass that along.:::

Bisquik Muffins?
Can the homemade Bisquik mix be used to make breakfast muffins? If so does anyone have any nice recipes? Fruit ones would be nice. Banana etc... It will be a nice change for my girls in the morning. They will think they are having cake for breakfast!

^^ I made the easy coffee cake today...I confess I used my offbrand biscuit mix. I need to use it up before I make the master mix (it's time...I used all but 1/2 cup or so today). It was so yummy. I made it right before I went to pick up the boys and covered it with a towel and even though we took a little longer getting home than I had anticipated it was still warm. They were so surprised and gobbled it all up. I even gave my ex a slice and a cup of coffee when he came to pick up the boys for the evening. :angel: He liked it, too. :-P::

I can't wait to make the mix. I've just about got my grocery list completed and then....whoaaaaa nelly!! ROFLMAO
