Homemade Cake Mix

  • 3 1/3 cups solid vegetable shortening
    5 Tbsp. double acting baking powder
    7 2/3 cups sugar
    3 Tbsp. salt
    11 cups flour

    In a very large bowl (I use a plastic dish pan), combine dry ingredients. Mix until well-blended. Cut-in shortening, mixing until well distributed.

    Divide into 6 equal portions (about 3 1/2 cups each) and seal in quart-sized zip-lock bags. I don't know if it's necessary, but I keep these in the freezer. Makes 6 (9x13) cakes.

    For Yellow Cake:
    1 pkg. homemade cake mix
    1 tsp. vanilla
    2 eggs
    3/4 cup milk

    Mix all together as you would a store-bought cake mix. Pour into greased 9x13 pan (or two 8" round pans). Bake 350º for 30 - 40 minutes, or until cake tests done.

    For Chocolate Cake:
    Combine yellow-cake ingredients, adding 2 Tblsp. milk and 2 squares melted chocolate.

    For Spice Cake:
    Combine yellow-cake ingredients, adding 1 tsp. cinnamon, 1/2 tsp. allspice, and 1/4 tsp. cloves.

    For White Cake:
    Use 3 medium egg whites in place of the two eggs.
