Slow Cooked Coffee Pot Roast

This recipe was orginally posted in Oct. 2010 What's for Dinner thread by happymomof4.

slow cooked coffee pot roast


2 medium onions, thinly sliced
2 garlic cloves, minced
1 boneless beef chuck roast (3-1/2 to 4 pounds), quartered
1 cup brewed coffee
1/4 cup soy sauce
1/4 cup cornstarch
6 tablespoons cold water



Place half of the onions in a 5-qt. slow cooker. Top with garlic and half of the beef. Top with remaining onion and beef. Combine coffee and soy sauce; pour over beef. Cover and cook on low for 9-10 hours or until meat is tender.
Combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until gravy is thickened.Makes 10-12 servings.

I loved this recipe. It was simple to make and oh boy did it taste good!! I wasn't sure how the flavor would be since it had coffee in the recipe but I was pleasantly surprised. It got a two thumbs up from my household. But now I am dying to know where Charlotte got this recipe!! Thank you Charlotte for posting it and my family truly enjoyed it.

Felicia I am not sure where I got this recipe from. I love this recipe. It is a favorite in my house also. It is such a simple recipe. I always have the ingredients on hand.

This sure sounds tasty! I may fix this the next time my son comes home from college for a few days Sure he will love it as he misses those home cooked meals...
