Pork Chops & Potatoes in Mustard Sauce

as posted by crowemommy in WFD 07/06:

Pork Chops & Potatoes in Mustard Sauce

6 – 8 pork loin chops
1 clove garlic, minced
1 can (10 ¾ oz) cream of mushroom soup
¼ C chicken broth
¼ C country Dijon style mustard
½ tsp crushed dried thyme
2 Tbsp cooking oil
¼ tsp pepper
6 medium sized potatoes, cut into thin slices
1 onion, thinly sliced

In a skillet, brown pork chops on both sides in hot oil. Drain.

In stoneware, combine mushroom soup, chicken broth, mustard, thyme, garlic and pepper. Add potatoes and onions, stirring to coat. Place browned pork chops on top of potato mixture.

Cover; cook on LOW 10 hours.

Now that I have restocked the pantry with low fat cream of celery, chicken, and mushroom soups I will try that Mustard and Potato Pork Chops that crowemommy got her Chef Guy for!

Congrats on the Chef Guy! I'm going to have to try that, especially since I've been trying to use my crock pot more!

Recipe Review: this recipe made the most DELICIOUS sauce! I would make this again as a side dish, even, without the pork chops. It would go well with a beef main course. And of course, it was great with the pork chops too. Great recipe!

I am making it right now and it smells and looks delicious. I have one of those crockpots with the non-stick metal pan that sits on the heating plate and I put the metal pan on a cast iron griddle to brown the chops. I have to heat the griddle pretty hot in the 8 to 10 out of 10 numbers on my burner dial (high heat). This way I can keep all the pan juices in the 'crock' and transfer the metal crock pan to the heating plate and add the potatoes and all later. I hope it turns out as tasty as it looks! I think too because the meat is pork and the heat is bottom only that I will put it on high and medium heat. In a normal crockpot the heating elements are around the sides.

Even though I only had 3 pork chops, I put in all the potatoes for the sauce!

The first time I tried to brown in the metal 'crock' I tried heating it on the cast iron without anything in it and the pan warped! I was dismayed but went on and put the ingredients in, the pan eventually flattened out on the heating plate and is fine now.
