Slow Cooker Beef & Veggie Stew
1 lb boneless beef stew meat, cut into 1" cubes
2 TBSP all purpose flour
2 TBSP vegetable oil
3 large chopped onion
12 small red skinned potatoes, cut into quarters
2 Med carrots, sliced
4 cloves garlic, minced
1 TBSP chopped fresh thyme or 1 tsp dried thyme leaves, crushed
2 TBSP tomatoe paste
1 1/2 tsp. instant coffee crystals
1 carton (32oz) beef broth
Season beef with pepper and coat with flour
Heat oil in skillet. Add beef and cook until browned
Place onions, potatoes, carrots, garlic, and thyme in 3 1/2 Qt slow cooker. Top with browned beef. Mix tomatoe paste, coffee and 1 cup broth. Pour coffee mixture and remaining broth into slow cooker. Cover and cook on LOW 8=10 hours OR HIGH 4-5 hrs.
Serve in bowls. Garnish with sour cream and chopped green onions (OPTIONAL)
