Crockpot Beef Roast

This is another recipe I'm pretty sure I got at Busycooks at About.com a while ago. My husband isn't much of a roast eater, but he and the kids will all eat roast fixed this way. I have frozen leftover meat in the gravy with good results.

~Crockpot Beef Roast~
2-1/2 to 3-pound beef roast (any cut will do)
1 packet powdered Italian salad dressing mix
1 packet powdered garlic and herb salad dressing mix
1 12-oz. bottle or can beer (not dark)

Sprinkle the contents of one of the packets in the bottom of the crockpot. Place the roast on top. Sprinkle the other packet over the roast, then pour the beer over everything. Cover and cook on low in the crockpot 8-10 hours. Serve with the juices or...

*Optional: The juice makes a good gravy. When the meat is done, remove it and keep it warm. Turn the crock on high and add, to your taste, a few tablespoons of butter and a few tablespoons of flour, whisking it well to reduce lumps. Cover the crock again and cook on high about 10 minutes. Serve with the roast over mashed potatoes or rice.

The meat is easily shredded when it's cooked, so this would be a good way to do hot roast sandwiches with gravy!

1 can cream of mushroom with roasted garlic soup
1 (1 oz) envelope dry onion-mushroom soup mix
1 (10 1/2oz) can condensed beef broth
3 1/2 - 4lb. eye of round roast (any roast will do, this is just what I am using today)
2 TBSP flour
1 tsp. salt
1/2 tsp. pepper
2 TBSP vegetable oil

1. Stir together the first 3 ingredients in a 5 1/2 qt. slow cooker.

2. Sprinkle roast evenly with flour, salt & pepper. Brown roast on all sides in hot oil in a large Dutch oven over med-high heat. Transfer roast to slow cooker.
3. Cover and cook on low for 8 hours.
4. Rmove roast from slow cooker; slice to serve. Whisk gravy in slow cooker, and serve over roast.
Easy and yummy!!

I use a Rump roast and onionsoup mix and put in all vegtables and beef broth and turn it on and when its time for dinner no fuss. save the broth and make gravy later so good
