Peach & Raspberry Pie--5.8 grams total fat & 0.8 grams saturated fat per serving

CRUST
1 1/4 cups flour
1/4 cup rolled oats (don't use quick oats)
3 tbsp canola oil
3 tbsp skim milk

FILLING
4 cups peaches, sliced
2 cups fresh raspberries
1/3 cup maple syrup
1/3 cup sugar
3 tbsp cornstarch
1 tsp lemon juice
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg

STREUSEL TOPPING
1/3 cup packed brown sugar
1/4 cup flour
1/8 tsp ground cinnamon
Preheat oven to 425 degrees. Coat a 9" pie pan with nonstick spray. In a food processor, combine flour and oats and grind till oats are a powder. Transfer to a bowl and add the oil and milk; stir till resembles coarse cornmeal and press into pie pan. Place pan in freezer 5 minutes. In a large bowl mix peaches, raspberries, maple syrup, sugar, cornstarch, lemon juice, cinnamon, and nutmeg and pour into pie pan. Combine brown sugar, flour and cinnamon and sprinkle over the pie filling and bake 40 minuites or till brown and filling bubbles. Cool.
