Spaghetti & Meatballs--5 grams total fat per serving,1.2 grams saturated fat per serv

4 servings

8 oz. ground turkey breast
2 slices wheat bread, crumbled
1 egg
2 tbsp. garlic, minced
1 tsp. jalapeno pepper, minced
1/4 tsp dried thyme
1/2 cup fat free chicken stock
1 cup onion, chopped
1 cup green pepper, chopped
1/2 cup celery, chopped
2 cups tomatoes, chopped
2 tbsp. tomato paste
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp pepper
8 oz. spaghetti

Combine turkey, bread, egg, garlic, jalapeno peppers, and thyme. Mix and form into 1" balls. Coat a non stick skillet with nonstick cooking spray. Add meatballs and cook till browned on all sides. Take meatballs out os skillet and wipe out with a paper towel. Add the chicken stock, onions, green peppers, and celery to skillet. cook for 5 minutes scraping as needed. Add tomaotes, tomato paste, basil, and oregano and mix well. Add meatballs and reduce heat; cover and simmer about 1 hour. Add pepper. Cook spaghetti according to pkg. directions; drain and serve topped with meatballs and sauce.
This is a good change instead of jarred or my regular sauce, but a lot of times I make these meatballs and just add to other sauces!
