Peach Cobbler--0.6 grams fat per 3/4 cup serving

8 servings

1/2 cup orange juice
1/4 cup sugar
2 tbsp cornstarch
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
4 1/2 cups sliced peeled peaches

3/4 cup flour
1/3 cup oat bran
1/3 cups sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup fat free buttermilk

Place orange juice, sugar, cornnstarch, cinnamon, and nutmeg in a 2 qt. pan and stir to mix. Place over heat and cook, stirring constantly, for 3-5 minutes or till thick and bubbly. Remove from heat and stir peach slices into the glaze. Coat a 2 qt. casserole with nonstick cooking spray and spread peach mixture into it.
Place the flour, oat bran, sugar, baking powder, and baking soda in a bowl and mix well. Stir in the buttermilk. Spread the batter over the fruit, and bake at 350 degrees about 40 minutes or till golden brown and filling is bubbly on edges. Let stand 10 minutes before serving.
