    12 lasagna noodles
    2 cups shredded nonfat mozzarella cheese
    1/4 cup grated nonfat Parmesan cheese

    FILLING
    15 oz nonfat ricotta cheese
    1 cup nonfat cottage cheese
    1/4 cup grated nonfat parmesan cheese
    2 tbsp. finely chopped fresh parsley

    SAUCE
    8 oz. turkey Italian sausage or 95% lean ground beef
    2 cans (1 lb. each) unsalted tomato sauce
    1 can (1 lb) unsalted tomatoes, crushed
    2 tbsp. tomato paste
    2 cups sliced fresh mushrooms
    1 medium onion, chopped
    1 1/2 tsp. crushed fresh garlic
    2 1/2 tbsp. dried Italian seasoning

    Place ground beef or turkey sausage in a 4 qt. pot. Cook until no longer pink, drain any fat and wipe out pan with paper towel. Add remaining sauce ingredients to the meat and increase heat and bring to a boil. Reduce heat to low, cover and simmer 25 minutes or till vegetables are tender. Set aside. Combine all the filling ingredients in a large bowl, stir to mix and set aside. Coat a 9x13" dish with nonstick cooking spray and spoon 1 cup of the sauce over the bottom of the pan. Lay 4 uncooked noodles over bottom, arranging 3 lengthwise and 1 crosswise. Allow a little space between the noodles for expansion . If you have to break any off to fit in the pan do so. Top the noodles with half the filling, 3/4 cup of the mozzarella and 1 1/2 cups of the sauce. Repeat the noodles, filling, mozzarella and sauce layers. Top with the remaining noodles, sauce, Parmesan and mozzarella. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and bake 15 more minutes. Remove from oven and let sit about 5 minutes before serving.
